Cooking Method and Preparation:

Step 1: In large skillet, saute onion and thyme in oil until onion is tender, about 5 minutes.

Step 2: Add red pepper and sweet potatoes; saute until potatoes begin to soften, about 8 minutes.

Step 3: Stir in beans and cook until potatoes are tender, about 5 minutes.

Step 4: Season to taste with pepper. Shape the sweet potato and black beans into hashes or balls as a great finger food that is full of protein and iron. You can also serve it with omelette as a breakfast meal.
